Ingredients

For the Lamb

  • 1 rack of lamb, cleaned and trimmed of silver skin
  • 8 oz Italian dressing
  • Cajun Blast Steak Seasoning, to taste
  • Cajun Blast Lemon Herb Basting Spray

For the Creamy Mint Sauce

  • ¼ lb unsalted butter (½ stick)
  • 1 tbsp minced garlic
  • 4 oz half & half
  • 4 oz heavy whipping cream
  • 2.5 oz fresh mint, chopped and mashed
  • Salt to taste

Instructions

Marinate the Lamb

  1. Season the cleaned lamb rack generously with Cajun Blast Steak Seasoning, rubbing it into the meat.

  2. Place in a shallow dish and pour Italian dressing over the lamb.

  3. Cover and refrigerate to marinate overnight.

Grill the Lamb

  1. Preheat grill to high heat.

  2. Remove lamb from marinade and place on the grill to sear the outside well.

  3. Move to medium heat and continue cooking for about 5-10 more minutes, basting with Cajun Blast Lemon Herb Basting Spray.

  4. Remove from grill and let rest briefly before slicing.

Make the Creamy Mint Sauce

  1. In a small saucepan over medium heat, melt butter.

  2. Add minced garlic, half & half, heavy cream, and salt.

  3. Stir in the chopped mint and simmer until the sauce thickens slightly—about 5–7 minutes.

Serve

  1. Spoon the warm mint sauce over the sliced lamb rack and serve immediately.
